Now that the existing menu is working well, Slaman plans to add pasta with homemade sauce and meatballs and panini sandwiches.
While Slaman said heloves to cook, he's turned those duties over to Rexroad - who can toss a mean pizza dough - and the kitchen staff.
However, he has a hand in quality control. On one recent afternoon, a staffer was going through a batch of banana peppers a piece at a time to remove the tougher end pieces.
Slaman said he wants every bit of topping on a pizza to be high quality.
He's also happy to cater to special orders and dietary needs. A pizza paddle marked "vegetarian" hangs on the wall for sliding those orders into the oven.
"A lot of times vegetarians don't want serving pieces that have touched meat," Slaman said.
The pizza style here is thin and crispy, and sizes are 12-inch and 16-inch. Because he knows lots of people are busy at work until later in the day, Slaman offers an unusual happy hour - 8 to 10 p.m. with drink specials.
